How To Make A Cheese And Potato Pie

Vegetarian Chef Alex Connell shows how to make a tasty Homity Pie. This pie contains cheddar cheese, leeks, potato, parsley and garlic. A nice, filling and delicious pie for warming in the winter months.

Ingredients

  • 2 leeks, chopped
  • 2 tbsp parsley
  • 2 cloves garlic, chopped
  • 500 g cooked, diced potatoes
  • 75 g cottage cheese
  • 50 g cheddar cheese

Step 1: Cook The Leeks

Add 1 tbsp olive oil to a pan, heat and add the leeks. Cook for around 5 minutes or until the leeks are nicely softened.

Step 2: Roll Out Pastry

Add some flour to the work surface. Roll out your pastry dough. Make sure the pastry is rolled out to be just larger than the baking dish you will be using.

Step 3: Make The Pie Filling

Add 500g cooked, diced potatoes to the leeks and continue to cook. Add 2 cloves crushed garlic, 20g chopped parsley, 50g grated cheese and 75g cottage cheese. Cook for another 5 minutes. Add a twist of salt and black pepper.

Step 4: Bake The Pie

Add the mixture to your pie dish. Place the pastry lid over the top. Use a knife to add indentations to the edge of the pastry. Cut away any excess pastry. Add to the oven at 180C for 20-25 minutes.
