Today, I would like to show you how to make a cheese and potato pie. It has also got another name for it, which is Homity Pie. Very simple! We have got potatoes already cooked, we have got leeks, cheese and cottage cheese, parsley and a little bit of garlic; and of course, it would not be a pie without some pastry. So, first thing to do is to start to cook our leeks, a little bit of olive oil into the pan, and we can sautee those leeks and soften them up. The leeks act almost the same as onions, it will give you that oniony flavor. So, if you find that you want to make this but you have not got leeks, just use some onions instead and it will be perfectly fine. This should cook for about five minutes or so, before I put the other ingredients there. While that is happening, I am going to roll out the pastry ready for the top. You can buy pastry ready-made or you can look at my video on how to make short crisp pastries. Of course, you can use puff pastry as well. A little bit of flour on the top of your surface to prevent the pastry from sticking, lightly dust your rolling pin and carefully roll it out. Now, if you want it to line the whole of the dish, put the filling in and put another layer on the top. That would be absolutely fine. But for this recipe, I am just going to put the pastry on to the top. So, roll your pastry out larger than your case. When you have done that, just roll it around your rolling pin and set that to one side until it is ready to use. Now, our leeks are sauteed nicely. They are softening up. Now, they have been cooked quite finely. So, they will cook quite quickly. To this, we can add our potatoes. These have already been cooked and chopped. So, if you are having a dinner on a Sunday and you want to make this the next day, make a few extra potatoes and you can use it for a Monday night snack. We have got some garlic. Again, like most things, some people like garlic, some people do not. If you like it, put more in. To that, we add parsley. We have also got some grated cheese. If you want to put more in, of course, you can. Put some cottage cheese. Just give that a quick stir and allow that to cook for about five minutes or so. Now that the leeks, potatoes and cheese have been cooking for five minutes or so, I just want to season them before I put them into by base. I have got twister salt and black pepper and this can simply go straight into our pie dish- could not be easier. The final stage is to put our pastry lid over the top. Just use the back of a knife like so just to give a pan and it will also allow the pastry to stick to the pie case. Once you have done that, just simply take your knife and cut away any excess pastry. We will put this in the oven for approximately 20 minutes. The cheese and potato pie has been in the oven for about 25 to 30 minutes so it should be done. There we have it! That is how to make a cheese and potato pie.
