- 40 g butter
- 40 g flour
- 200 g cheddar cheese
- 500 ml milk
Put your butter and flour in a pan, heat gently and stir until the butter is melted. Keep cooking the roux for a minute or two to cook the flour.
Add a tiny bit of milk and whisk well. Keep adding milk a little at a time and incorporating it into the roux.
Once all the milk is incorporated, add your cheese. Mix well.
Season to taste with pepper and salt.
