How To Make A Chicken And Cashew Stir Fry

Ingredients
- 500 g chicken thighs
- 3 corn flour
- 1 tsp sesame oil
- 1 1/2 tsp soy sauce
- 1 red pepper
- 5 spring onions, chopped into 5cm pieces
- 80 ml chicken stock
- 3 roasted salted cashew nuts
- 4 peanut oil
- 2 fresh coriander, chopped
Method
Begin by preparing all your vegetables and chopping up your chicken thighs.
Marinade the chicken pieces in the sesame oil, the corn flour and 1 tbsp of the soy sauce and mix it well.
Heat up a wok with 1 1/2 tbsp of the oil and add the vegetables. Remove them to a heat proof dish when they are tender, this should take a couple of minutes.
Add a little more oil and fry half the chicken pieces. Try not to move them around too much as this will allow them to brown a little. Remove the chicken.
Add the rest of the oil and fry the second half of the chicken. When this is cooked, add back the rest of the chicken, the stock and 1/2 a tbsp of soy sauce. After you bring this to the simmer, add the vegetables and heat through.
Remove from the heat and stir in the cashew nuts, reserving a few to use as a garnish. Serve with steamed rice or greens with the remaining cashews and chopped coriander sprinkled over the top.
