Prepare the ingredients to get ready to cook.

Prepare the barbecue

If you have a charcoal barbecue light it 30-45 minutes before you plan to cook.

It is ready to cook on when there are no more flames and the charcoal has turned white.

If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.

Season the chicken

Place the chicken breasts into a medium bowl. Add the cumin, the paprika, one clove of minced garlic and salt and pepper. Finally, add two tablespoons of olive oil and then mix together well, making sure the breasts are well coated and leave aside.

Make the aioli

Add the saffron to the lemon juice and mix together until it becomes yellow. Put the egg yolks in a bowl and add the wholegrain mustard, the Dijon mustard, the garlic, salt and the saffron & lemon juice mixture. Then, whisk everything together. Add in the oil very slowly, each time whisking in just a small amount. This is very important as the mixture will not emulsify if not properly whisked! Repeat, until all the oil is added in and the mixture is well combined.

Season the bread

Place the bread on a tray and brush generously with the remaining olive oil. Season with salt and pepper. Then, turn the bread over and repeat the process on the other side.

Barbecue the chicken and bread

Using the tongs, place the seasoned chicken breasts on the Barbeque and grill for 2-4 minutes. If there is room, you can also place on some slices of bread, and grill them for 1-2 minutes. Once the first side of the chicken is cooked and golden, turn it over with the tongs, and grill the other side. Then, turn the bread over as well. When everything is done, remove and place on a baking tray. Grill any remaining bread and then remove and place on the tray with the rest.

Assemble dish

Place two slices of grilled bread on the chopping board and spread the aioli mixture over both with a spoon. Then, place on two chicken breasts, some of the roasted pepper and a few sprigs of Coriander. Close the sandwich and cut it in half with a large knife.
