How To Make A Chinese Noodle Salad

In this simple and easy to follow guide, the masterful Emma Marshall talks you through a quick and simple Chinese salad recipe, flavoured with coriander, garlic and ginger.

Ingredients

  • coriander leaves
  • 2 tsp ginger
  • 1 clove garlic
  • 2 limes
  • 1 tbsp runny honey
  • 1 orange pepper
  • 1 red pepper
  • 150 g mangetout peas
  • 6 spring onions
  • 250 g fine Chinese egg noodles
  • 90 ml grapeseed oil

Step 1: Prepare The Ingredients

Finely chop your coriander leaves, chop your peppers, grate your fresh ginger, crush your garlic clove, extract the juice and zest from the limes, and slice your spring onions.

Step 2: Make Dressing

Into a small mixing bowl, add your runny honey, the grated ginger, the crushed garlic, the lime juice and zest, the grapeseed oil, season with salt and pepper, and then add the coriander leaves. Give this dressing a mix.

Step 3: Cook And Dress The Noodles

Put your noodles in boiling water, and let them simmer for about 5 minutes. Put these noodles in a small mixing bowl and mix them with the dressing. Add the peppers, mangetout, and the spring onions to the noodles, and mix again.

Step 4: Serve

Using your hands, serve onto a serving plate.
