Ingredients
- 1 cups (250ml) chorizo
- 1 cups (250ml) pancetta
- 1 cups (250ml) red pepper, diced
- 2 cups (500ml) onions, chopped
- 1 cups (250ml) paprika
- 200 ml white wine
- 1 garlic, chopped
- 2 dried chillies
- 1/2 tsp thyme
- chicken stock

- 6 chicken thighs, browned
- 1 cups (250ml) peas
- 2 cups (500ml) diced tomatoes
- 1 cups (250ml) clams
- 1 cups (250ml) squid
- 2 cups (500ml) calasparra rice
Method
Heat some oil in a paella pan and add a handful chorizo, a handful of pancetta, a handful of diced pepper and two handfuls of chopped onion. Fry everything together, mixing well.
Add your paprika, mix again then a bit of the wine, 1 tbsp of chopped garlic, a little thyme, a couple of dried chillies and the rice. Mix well.
Add a glass of wine and a little saffron, and cook it down to burn off the alcohol, then cover the rice with chicken stock and cook for 10 minutes. Add more stock if it gets too dry.
Add the browned chicken thighs, some frozen peas, diced tomatoes, squid, clams and prawns. Cook for another 10 minutes.
Make sure you turn the pan often to ensure it cooks evenly.
