Ingredients

  • 1 aubergine
  • 250 g mushrooms, sliced
  • 1 red pepper
  • 1 clove of garlic, crushed
  • 1 sunflower oil
  • 1 pack pre-cooked brown basmati rice
  • 4 sundried tomatoes, optional
  • pine nuts, optional
  • parsley
  • thyme
  • cheddar cheese
  • parmesan cheese

Method

Slice the aubergine into 1 cm thick slices, brush both sides with olive oil and fry for a few minutes, turning to ensure both sides are cooked. In a separate pan, chop the peppers and mushrooms into thin slices and stir fry in olive oil until softened. Add the chopped garlic and increase the heat. Remove the fried aubergines from the pan and place in a baking dish.

If you are using sundried tomatoes and pine nuts, mix these in with the pepper and mushrooms now.

Add the packaged brown basmati rice or cooked brown basmati rice and stir through. Stir in the fresh chopped parsley and thyme and a couple of tablespoons of single cream to bind. Grate the cheddar cheese and parmesan cheese on top and put under the grill for a few minutes, until the top is golden and bubbly.

Remove from the heat and spoon the mixture on top of the aubergine layer in the baking dish.
