Step 1: Cook the noodles

  • 400 g egg noodles
  • 4 salmon fillets, with skin on
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 cucumber, finely sliced
  • 2 spring onions, finely sliced
  • for the soy dressing:
  • 2 tsp sesame oil
  • 120 ml soy sauce
  • 2 tbsp balsamic vinegar
  • 60 ml lime juice
  • 2 tbsp sugar
  • 2 red chillies, finely chopped
  • 1 large pan
  • 1 colander
  • 1 frying pan
  • 1 brush
  • 1 spatula
  • 1 bowl
  • 1 whisk
  • 1 spoon

Drain the water through a colander and refill the saucepan with cold water. Add the noodles to cool. Leave for 2 minutes and drain again.

Step 2: Make sesame dressing

Into a bowl add the sesame oil, soy sauce, balsamic vinegar, sugar, lime juice and the chopped chillies. Stir well until the sugar dissolves.

Step 3: Season the salmon

Brush both sides of the salmon fillets with oil and season with salt and pepper.

Step 4: Cook the salmon

Heat a dry frying pan over a high heat for 2 minutes. Add the salmon, skin down and cook for 2 minutes. Turn and cook for another 2 minutes. Remove the salmon from the pan and allow to rest for 2 minutes.

Step 5: Serve

Place the noodles on a plate and arrange the cucumber and spring onions on top. Add the salmon and finally drizzle over the soy dressing and serve.
