How To Make A Cumberland Sauce

In this step by step guide chef Paul Mulvenna-Pegrum shows you how to make a sweet and fruity Cumberland sauce. Perfect with sausages of other rich meats.

Ingredients

  • 1 lemon
  • 1 medium orange
  • 4 redcurrant jelly
  • 4 port
  • 1 tsp mustard powder
  • 1 tsp ground ginger

Method

Cut the rind off the lemon and orange, then cut it into small strips. Cook the rind in boiling water until it is soft, then rinse it in cold water.

Heat the redcurrant jelly in a pan, then add the ground ginger, port, mustard, the juice of an orange and the juice of a lemon. Mix well.

Add salt and pepper, and the cooked rind to the sauce. Bring to the boil and reduce by about half.

Serve with sausages or other rich meats.
