Step 1: You will need…

  • 100 ml olive oil
  • 1 leek, washed and sliced, white part only
  • salt and pepper, to taste
  • 1 courgette, or zucchini, finely sliced
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh parsley, chopped
  • 3 eggs, lightly beaten
  • 60 g feta cheese
  • 1 tsp dried oregano
  • 10 cherry tomatoes
  • 2 sprigs of fresh parsley, for garnish
  • 1 non-stick frying pan
  • 1 spoon
  • 1 saucepan

Step 2: Heat the grill

To begin, place the grill onto its highest setting.

Step 3: Cook the leek

Place the non-stick frying pan over a medium to high heat. Add two-thirds of the olive oil and the leek. Season with salt and pepper. Cook for four minutes, stirring occasionally.

Step 4: Cook the courgette

Add the courgette to the frying pan with the leek. Cook for four minutes stirring occasionally.

Step 5: Make the omelette

Add the parsley and the mint and mix. Pour the eggs over the top. Make sure the egg and vegetables are evenly distributed. Cook for three minutes. Crumble the feta cheese over the omelette. Cook for thirty seconds and remove from heat.

Step 6: Place under grill

Cook the omelette by putting it under the grill. Cook it for five minutes, or until golden and bubbling. Remove it from the grill and set it aside.

Step 7: Cook the tomatoes

Heat the saucepan on high. Add half of the remaining olive oil and the tomatoes. Season with salt and pepper. Stir the tomatoes and cook for thirty seconds. Sprinkle on the oregano and mix in. Cook for thirty more seconds more or until the skin starts to split.

Step 8: Garnish and serve

Place the omelette onto the chopping board and cut it into quarters. Place two quarters onto each plate, one quarter with the feta cheese showing and the other face down. Add the tomatoes. Garnish with parsley and drizzle with the remaining olive oil.
