A flat white is just among the various interpretations of an espresso-based coffee. It's basically a latte prepared by pouring a microfoam of steamed milk into a smaller cup, a single 8-ounce or 30 ml.
So, I'm going to show you how to make a flat white. Now, a flat white is essentially a small strong latte. So to start with, I'm going to take some fresh cold milk.
I'm going to pour this into our steaming jug and then we're going to steam this. To start with, we take our steam wand and we purge the steam wand to take the water out from the inside. We don't want that going into our milk and tainting our milk.
We want a nice fresh crisp clean taste. So, we extend our steam wand out and then we're going to put it so that the tip of the steam wand is just about a centimetre underneath the top of the milk. We're going to take a cup, a small one for this, something like and 8-ounce cup, nothing too much bigger than that otherwise you'll be creating a latte and not a flat white.
We press our button. We're now going to extract a double ristretto. If you need to find out how to extract a double ristretto, you can do this by having a look at the video on this series entitled How to Extract a Ristretto.
Once we've done that and we need to stop it about the 12- or 13-second mark, we take it out, we've got our double ristretto. We're just going to polish our milk now. That means giving it a little bit of a bang, giving a nice swirl around, to mix all the milk together.
Make sure there are no large bubbles in it, making sure that it's nice and smooth all the way. And that is how to produce a flat white.
