I'm going to show you today how to make an Italian frittata. It's very similar to an omelette with some vegetables. So, three eggs, got my pan on nice and hot, so you know we got some broccoli there, we got some peppers there, I got some onions as well.
The broccoli cooks, so it goes at the end. So I'm going to spare off my onions and peppers and at hand, also I got some fresh beans which is cook as well and add at the end. So, three eggs, nice hot pan, now, the Italians put their omelette through the oven, I'm going to show you a really quick way of doing it, so mix them those eggs, we got salt and pepper.
Now, you could if you want to add some pesto to this to get a real nice taste, it's entirely up to you, it's all about personal preference. Olive oil, not too much, non-stick pan there, and then my egg is not going to stick and in goes my onions, sizzle there. Now, we are going to add a little bit of thyme to it to add a little bit of flavor to it.
Just get my egg out, so my vegetables are cooked now, so all I want to do now is add my mix to it straight in there. Don't rush to beat it, let it cook, let it seal itself, let it get going the pan slowly, slowly move around your pan there, we got a nice non-stick pan in there, take it away from the edges, just cook it through. Now, in this stage, what I want to do, before it cooks, is actually, I'm going to have my broccoli and my green beans.
Just want to heat that through the edges. Just take a few seconds to make, spin around quite nicely. So, what I want to do is actually to cook or reheat my broccoli and my French beans for the mixture which is doing quite nicely, very simple, tasty.
What I'm going to do now is turn it over. Beautiful, quick and easy, absolutely beautiful, and that's how I make my frittata. .
