How To Make A Goats Cheese Salad
The masterful vegetarian chef, Alex Connell, shares his delicious goat's cheese salad recipe with you, the ultimate entree to suit any occasion. This beautiful dish combines goat's cheese, stuffed figs and caramelised walnuts served on a bed of rocket and orange salad.

Ingredients
- 2 tbsp sugar
- 200 g walnuts
- 4 ripe figs
- 1 tbsp mango chutney
- 100 g goats cheese
- 200 g rocket
- 2 oranges
Step 1: Prepare Ingredients
Chop your walnuts, slice your orange into small pieces, and slice a red chilli finely.
Step 2: Fry Walnuts
Bring a frying pan to heat, and place your sugar into the pan, followed by the chopped walnuts. Add the water, and then give a stir to make sure the ingredients are mixed together. Let simmer.
Step 3: Prepare Figs
Finely slice the ends off the figs, and then score a cross into the center of each fig with your knife, and split them open. Place them onto a baking tray, place 1/4 mango chutney into each fig, stuff a small amount of goats cheese into each fig, and place them under the grill for about 5 minutes.
Step 4: Assemble And Serve
Take the walnuts out of the frying pan, and place onto a separate plate. Smother two serving plates with rocket, and then sprinkle some chopped and caramelized walnuts around each plate, as well as the orange slices. Take the figs from the grill, and place two stuffed figs in the center of each serving plate. Garnish the figs with two shreds of the sliced chilli.
