Step 1: Cook the chicken

  • 1 ½ tbsp olive oil
  • 1 medium chicken fillet
  • sea salt
  • freshly ground black pepper
  • 2 large thick slices of bread
  • ½ medium avocado, peeled and chopped
  • 1 tbsp mayonnaise
  • 1 medium bunch of rocket
  • 2 rashers of bacon
  • ½ tomato, sliced
  • ½ lemon - juiced
  • 1 handful potato chips
  • 1 chopping board
  • 1 frying pan
  • 1 slice
  • 1 sharp knife
  • 1 food processor
  • 1 serving plate

Step 2: Slice the chicken breast

When the chicken breasts are cooked, remove from the pan and cut into 1cm slices. Leave to rest.

Step 3: Make the mayonnaise

Place the avocado, lemon juice, salt, pepper and mayonnaise into the food processor and process until smooth. Place in a bowl and keep on one side.

Step 4: Make the sandwich

Spread a spoonful of avocado mayonnaise on a slice of bread, top with a handful of rocket salad, then chicken, bacon and sliced tomato. Finish with another spoonful of the mayonnaise and place the remaining slice of bread on top.

Step 5: Serve

Cut the sandwich in half and serve garnished with salad and potato chips.
