I'm going to show you how to make a nice marinade for a halibut. I got a very nice piece or pieces of halibut that we are going to marinade. In my bowl, I got a great formula, 3 parts of oil and 1 part of vinegar.
That's your base for your marinade. That is your base - if you want to add after that, chilli, your herbs, but if you keep that as your formula, your oil, if you want to do sesame or a vegetable oil and your acid, that is a great formula to have. So, like I said, 3 parts of olive oil and one part of vinegar.
Now, the acid can be a lemon, it can be a lime, it can be a malt vinegar, it can be a sherry vinegar, it's entirely up to you, depending on what you're using it for. Like I said, that's your base for your marinade. Now, I'm happy to keep that in the marinade for no longer than 20 minutes.
I don't want the vinegar to attack the fish and cook it, I don't want that. All I am going to do is add the moisture, add the flavour and get the texture just right for my grilling. So I'm going to add some salt and pepper, but like I said, nice sesame oil or some flower oil.
That's going to go in the refrigerator now, and I'll take that out and I'm happy to use that as my marinade base for my cooking, grilling, barbequing. Perfect! And that's how I marinade my halibut. .
