Step 1: You will need…

  • 75 ml dark rum
  • 50 ml pineapple juice
  • 1 tsp caster sugar
  • 120 ml soda or carbonated water
  • Ice cubes
  • 1 shaker
  • 1 strainer (if the shaker doesn't include one)
  • 1 collins glass
  • 1 barspoon or stirrer

Step 2: Prepare

Begin by filling the cocktail shaker half full with ice cubes.

Pour 75ml of dark rum into the shaker.

Pour 45ml of pineapple juice into the shaker.

Finally, add a teaspoon of caster sugar into the shaker.

Ensure that the lid is secure on the shaker and shake vigorously.

Add ice to the collins glass, almost to the brim.

Secure a strainer over the shaker and pour the cocktail into the collins glass.

Add 125ml of soda water into the collins glass and, using a barspoon or stirrer, stir well.

Step 3: Serve.
