Step 2: Grenadine
Pour 10 ml of Grenadine into the champagne flute.
Step 3: Muddle the Lychees
Drop 2 lychees into the mixing glass and use the Muddler to mash.
Step 4: Mango Purée
Add 20 ml of Mango Purée to the mixing glass. If you don't have mango purée add a chunk of mango and muddle again.
Step 5: Bison Grass Vodka
Bison Grass is a variety of vodka hailing from Poland. Famously, a single blade of bison grass is added to each bottle of this herb infused vodka. Add 10ml to the mixing glass.
Step 6: Ice
Throw some ice on top of the concoction and stir well, using a twisting motion.
Step 7: Strain
Strain the mixture into the champagne glass. Use a spoon to steady the stream of the mixture. Don't mix it with the grenadine. Instead, let it settle on top.
Step 8: Champagne
Chill your cocktail spoon by placing it in ice, and then hold it in the glass a fraction above the top of the mango layer.
Carefully pour the chilled champagne down the spoon.
Gradually lift the spoon up as the champagne level rises, it should be just touching the top. This technique allows the champagne to form a layer at the top of the drink.
Step 9: Garnish
Spear a lychee on a cocktail stick, balance it on the rim of the glass, and serve.
