How To Make A Mandarin Salad
Learn to make this fruity and fresh mandarin salad with head chef Paul Mulvenna Pegrum. Serve with grilled meat, fish or on its own as a light lunch.

Ingredients
- 2 orange juice
- 1 1/2 balsamic vinegar
- 2 tsp honey
- salt
- pepper
- 2 olive oil
- 50 g baby spinach leaves
- 1/4 red onion, chopped
- 1 can mandarin oranges
- 3 pine nuts, pan fried
Method
To make the dressing, mix together the orange juice, balsamic vinegar, honey, oil, salt and pepper and whisk together in a bowl.
Mix together the spinach, onion, mandarin, pine nuts and the dressing.
