Ingredients

  • 350 g tinned sweetcorn
  • 350 g tinned black beans
  • 1 red pepper
  • 3 tomatoes
  • 2 avocados
  • 200 g green beans
  • 6 flour tortillas
  • 10 ml sunflower oil
  • salt
  • pepper
  • 1 red onion
  • 1 garlic clove
  • 1/2 coriander bunch
  • 1 red chilli
  • 10 g ground cumin
  • 60 ml balsamic vinegar
  • 120 ml olive oil
  • sour cream

Method

Cook the green beans in salted boiling water for about 2 minutes.

Make the dressing by mixing the chopped garlic clove, a chopped chilli, 10 g of ground cumin, 1 sliced red onion, half a bunch of chopped coriander, balsamic vinegar and the olive oil.

Mix together the chopped tomatoes, chopper pepper, sweetcorn, black beans, chopped avocado and green beans. Season with salt and pepper.

Pour the dressing over the salad and mix well.

Fry the tortillas in hot sunflower oil until golden brown.

Serve the salad on top of the tortillas, garnished with sour cream.
