Step 1: You will need.

  • 25 ml apricot brandy
  • 50 ml gold rum
  • 6 pineapple chunks
  • 50 ml raspberry purée
  • 10 ml sugar syrup
  • juice from half a lime
  • 1 crushed ice
  • 1 25ml/50ml measure
  • 1 old fashioned glass
  • 1 muddle stick
  • 1 knife
  • 1 chopping board
  • 1 bar spoon or stirrer

Step 2: Prepare the cocktail

Begin by adding 6 pineapple chunks and 3 raspberries to the old-fashioned glass.

Using a chopping board and a knife, cut a lime in half and squeeze in the juice from 1 half. Finish by adding 10ml of sugar syrup.

Using a muddle stick, or a fork if you do not own one, press the ingredients together.

Top the old-fashioned glass with crushed ice.

You should now measure out and add 25ml of apricot brandy and 50ml of gold rum. Stir well.

Step 3: Garnish and serve.

Garnish with a slice of pineapple and a raspberry. Perfect for hot summer days!
