Call it Enlarge Call it "the big cheese," if you will. This crowd-pleasing Mexican snack couldn't be easier to make at home. And, with the help of the chefs from the famous El Coyote Café in Los Angeles, it couldn't be any tastier, either.

Step : You will need

  • 4 Large Flour Tortillas
  • 450 g Cheddar Cheese
  • 1 cups (250ml) Green Chilies
  • Sour Cream
  • Guacamole

Step 1: Fill The Tortilla

While you are preparing the tortillas, heat a griddle or frying pan, over medium heat.

Place a flour tortilla on a flat surface, and cover half of it with 4 oz (113 g) or more of cheddar cheese. Spread the green chilies over the cheese. Fold the tortilla in half. Repeat this step for all of the tortillas.

Step 2: Melt Cheese

Put a couple tablespoons of vegetable oil on the griddle or frying pan. Place the folded tortilla on the heated griddle or frying pan. Heat for a few minutes on each side or until the cheese is completely melted and the tortilla is slightly browned. Repeat this step for each of the tortillas.

Step 3: Remove and Serve

Once the cheese is completely melted, remove the tortilla from heat, and place it on a plate. Cut the tortilla in half and then in half again, with a knife or pizza cutter.

You have the option of serving the quesadilla with sour cream and guacamole, or your favorite topping.
