How To Make A Raw Food Lunch
Rebecca Kane, Raw food chef and founder of Shine on Raw shows us how to make a delicious raw courgette pasta with pesto.

You will need:
- 2 courgettes
- 1/4 cups (60ml) pumpkin seeds
- 1/2 cups (120ml) olive oil
- 1 salt
- 2 lemon juice
- 1 cups (250ml) fresh basil
- 1 cups (250ml) fresh parsley
- 1 cups (250ml) cashews
- 1 cups (250ml) cherry tomatoes
- 1/4 cups (60ml) pinenuts
- 3 cloves of garlic
- 1 Food Processor
- 1 Spiralizer
Firstly set your Spiralizer to the smallest blade setting and feed your courgettes into the Spiralizer to create the courgette pasta.
Method
To create the pesto add 2 cloves of garlic into the food processor to mince them. Then add the olive oil, pumpkin seeds, pine nuts, parsley, basil and lemon juice. Blend until all the ingredients are well combined. Add to pasta and mix thoroughly.
To create the "raw parmesan", mince 1 clove of garlic in a blender, add cashews and a generous pinch of salt and blend the mixture until it starts to clump together.
Add the "raw parmesan" to the pasta and sprinkle the cherry tomatoes to finish the dish.
