A roux is used to thicken all types of dishes, from a béchamel sauce to a casserole or soup. In tutorial Chef Paul Mulvenna-Pegrum shows you how to make it.

Ingredients

  • 100 g flour
  • 100 g butter

Method

Begin by melting the butter in a pan. Once melted, add the flour a little at a time, making sure it is fully combined between additions.

Keep cooking the paste for about a minute to get rid of the floury taste.

Once cooked, you can leave in the fridge and use when needed.
