In this video Karen Brett's shows us how to make a delicious seaweed and cucumber salad. She also explains how to make sambai zu dressing which combines rice wine vinegar, fish stock soy sauce and sugar.
I'm going to show you how to make a seaweed and cucumber salad. First of all, what you want to do is make a sambai zu dressing which is rice wine vinegar, dashi which is like a fish stock, if you canâ't get dashi which is the Japanese fish stock just use an ordinary fish stock, soy sauce and sugar. All you do is put it onto a hob and warm it up until the sugar has dissolved, which usually takes about 10 minutes.
Whilst that's happening, we now want to prepare our cucumber for the salad. Cut your cucumber in half lengthways and remove the seeds from the centre.I'm using a teaspoon, running it along the centre.
You donâ't really want the seeds in because it just makes the cucumber salad watery. Then, slice finely and keep in a bowl of cold water until you're ready to use it. Meanwhile, we're now going to prepare our wakame, which is a Japanese word for seaweed and its's this dark green dried looking ingredient here.
And you just need to reconstitute it with some warm water. So,I'm going to put it into a large bowl and add some warm water. And what will happen is the wakame will swell up and become a nice vibrant green to use in your salad.
I now have the sambai zu sauce that's been cold and ready to use, our cucumber has been drained, and our wakame seaweed that as you can now see has plumped up into this nice green grassy colour. So we're going to put the seaweed into a bowl, we're going to add our sliced cucumber and then we're going to pour over our dressing, give it a good mix-up, so that all the flavours are well combined and then just spoon it into your serving dish. You want a bit of the dressing to adhere to the wakame and cucumber, but you donâ't want it swamped in dressing, so just tilt the spoon to the side of the bowl as you're filling your serving dish.
This is one of my favourite salads; its's good with a barbeque, its's good with cold chicken. And then, the last thing, just get some toasted sesame seeds and sprinkle on top. And that's how to make seaweed and cucumber salad.
