Step 1: You will need

  • 4 large apples, chopped
  • 1 puff pastry sheet
  • 1 cups (250ml) brown sugar
  • 2 tbsp milk
  • 1 large egg
  • 2 tbsp butter
  • 2 tsp cinnamon
  • lemon juice, to taste
  • flour
  • cooking brush
  • rolling pin
  • cooking sheet

Step 2: Apple Sauté

In a large pan, add 2 Tbsp butter. Allow the butter to melt half way, then add 4 chopped apples. Coat the apples with the butter. Add 1 cup (200 g) brown sugar and coat the apples in the sugar. Add 2 tsp cinnamon and coat the apples in the cinnamon. Sauté on medium heat for 4-5 minutes, or until soft. Add a squeeze of lemon juice and stir. Pour into a bowl and refrigerate for 1 hour.

Step 3: Prep The Pastry

Dust both sides of 1 puff pastry sheet with flour. Use a rolling pin to smooth out all sides of the pastry sheet. Wipe off excess flour and pour the chilled apple sauté in the middle of the pastry sheet. Make an egg wash with 1 egg and 2 Tbsp milk whisked together. Brush all sides of the pastry sheet with the egg wash.

Step 4: Fold And Seal

Gently fold the pastry sheet over the apple sauté and pinch closed. Seal both sides in the same fashion; folding and pinching shut. Roll the strudel over and place on a cooking sheet. Add several slits across the top to act as breathing holes. Brush all sides with egg wash to finish.

Step 5: Bake And Serve

Bake at 400F (200°C/Gas Mark 6) for 15-20 minutes, or until the pastry sheet is golden brown. Serve hot with a side of ice cream and enjoy!

    This is very tasty but the proportions for some of the ingredients are way off. Maybe my large apples were bigger than those used in the video but I ended up with way too much apple filling. Use 3 apples at the most. Also, the suggested amount of 1 cup of brown sugar is gargantuan. Use no more than half of that.
