How To Make A Spinach Risotto

In this VideoJug film, Allan Pickett, head chef at Plateau in Canary Wharf, shows you how to make a delicious spinach risotto.

Ingredients

  • 200 ml risotto rice
  • 500 ml vegetable stock
  • spinach leaves
  • 2 parmesan
  • 50 g butter
  • 1 clove garlic, peeled
  • 1/2 onion, finely chopped

Method

Place the oil and butter in a hot pan. Add the onion and garlic and cook on a medium heat.

Add the rice and stir. Now add the vegetable stock, adding one ladleful at a time. Keep stirring.

When the rice has absorbed all of the stock, add more butter and the grated parmesan cheese. Add the spinach and stir through until the leaves are cooked. If the risotto is becoming too stiff, add more vegetable stock.

Season with salt and pepper and serve immediately, with extra grated parmesan on top.
