  • black sugarpaste
  • blue sugarpaste
  • red sugarpaste
  • brown sugarpaste
  • cake board
  • palette knife
  • rolling pin
  • rolling spacers
  • smoothers
  • ball tool
  • ruler
  • cutting wheel
  • circle cutter

Method

Slice your cake in half and fill with buttercream and jam then coat with a thin layer of buttercream using a palette knife. Prepare your sugar paste for rolling by kneading. Use some cornflour to prevent it from sticking to your work surface. Roll the sugar paste out using the rolling spacers as a guide and to ensure an even width.

Drape the rolled out sugarpaste over the cake and smooth with your hands. Trim the excess with a palette knife and transfer the cake onto your presentation board. Use smoothers to smooth and shape the cake how you like. Pinch the edges of the icing to make it less neat and appear more like a sponge and using a ball tool, make indents all over the cake's surface, again to make it look more like a sponge.

Knead and roll out white and brown icing for the shirt and trousers and stick them in position using edible glue. Trim excess and smooth. Attach sugar paste arms and legs, tie and collar and facial features and your cake is complete!
