We are going to show you how to make a sweet chilli sauce, very simple, very easy to make. You can make a lot of it and put it in a jar and keep in a fridge for a while. It's a good one to do for a weekend.

The ingredients are 3 chillies which we finely chopped, 100 grams of castor sugar, a quarter of a cucumber which we peeled, deseeded and then grated the cucumber flesh, 100 ml rice wine vinegar. First of all, pop the sugar and vinegar into the sauce pan. You have to get a sticky syrup out of the sugar and the wine.

Stir in till the sugar dissolves well. The cucumber gives an interesting texture and it will thicken the sauce. This sweet chilli, you can serve with any Asian dish.

Here, we are going to serve with crab cakes. So, we have reduced the rice wine vinegar and sugar down so that it is syrupy. It's about half, we have reduced it down by another 5 minutes.

Add in the chillies. The sweetness of the sugar contrasts the real heat of the chillies. Then add in the cucumber which slightly thickens the sauce and gives freshness to it.

And then, we are going to serve it with the crab cakes. This is how we make sweet chilli sauce. .
