How To Make A Tequila Fizz Cocktail

Prepare your cocktail

Take a lemon and cut it in half. Then squeeze both halves, discard the skin and keep the juice handy to use in a short while. Next, half fill the shaker with ice cubes. Then measure out 75 millilitres of tequila - or more or less a generous splash - and pour it over the ice. Follow this with 25 millilitres, or a splash of the fresh lemon juice. And add a teaspoon of caster sugar.

Now take an egg, gently crack it on the side of the shaker and slowly, ease the white out, tipping the yolk from each half of the shell as you go. Discard the shell and yolk when you finish.

Secure the lid on the shaker and holding both ends, shake it at an angle for about 20 seconds. When you finish, remove the lid and place the strainer on top (if your shaker doesn't include one).

Present your cocktail

Put several ice cubes into the Collins glass. Strain over the ice, giving a little shake to let all the ingredients come out and now it is ready to serve.
