How To Make A Tomato Cream Sauce

Chef Claude Mariaux demonstrates how to make a creamy tomato sauce with onions, tomato passata and whipping cream. This dish takes minutes to make but is satisfying and delicious.

Ingredients

  • 1 tbsp olive oil
  • 250 g onions, chopped
  • 200 ml vegetable stock
  • 500 ml tomato passata
  • 100 ml whipping cream
  • pinch of sugar
  • salt
  • pepper

Step 1: Add Onions And Tomato

Add 1 tbsp olive oil to a pan and heat. Add 250g chopped onions and allow to sweat. Then add 200ml vegetable stock and bring to the boil. Add 500ml of tomato passata and stir well.

Step 2: Add The Cream

Add a pinch of sugar, salt and pepper to the pan. Allow the sauce to simmer for several minutes. Then add 100ml whipping cream and allow to boil for another 2-3 minutes or until the sauce reaches the desired consistency.

Step 3: Add The Pasta

Add 50g semi-dried tomatoes to the sauce, then add some freshly cooked pasta. Stir until the pasta is well coated with the sauce. Season with salt, pepper and garnish with chopped parsley. Place on a plate. Serve.
