Ingredients

  • 1 sunflower oil
  • 1 onion, finely chopped
  • 250 g baby potatoes, cooked
  • 1 clove garlic, chopped
  • 5 okra
  • 1 garam masala
  • 1 pack pre-cooked packaged pilau rice
  • flaked almonds
  • sultanas
  • 4 natural yoghurt
  • coriander, chopped

Method

Heat the sunflower oil in a pan, add the chopped onion and fry until golden. Add the cooked potatoes. This is a great way to use leftovers from the night before. Increase the heat slightly and cook for a few minutes, until the onions and potatoes are golden brown. You can also add chicken or prawns to this vegetarian dish at this stage, cooking for a further few minutes.

Add the chopped garlic, chopped okra and garam masala. Add the pilau rice, straight from the pack, flaked almonds and sultanas and stir continuously until all the ingredients are combined.

Finally stir through the natural yoghurt and chopped coriander. Serve immediately.
