How To Make A Vegetarian Casserole
Chef Alex Connell shares his recipe for a vegetable casserole made with vegetarian sausages, new potatoes, carrots, apples, mustard, thyme and garlic.

Ingredients
- 680 g new potatoes
- 2 cooking apples
- 450 g carrots
- 280 g chopped tomatoes
- 550 ml vegetable stock
- 1 tsp thyme
- 1 tsp English mustard
- 1 tbsp cooking oil
- 1 tsp soy sauce or worcester sauce
- 2 cloves of garlic
- 6 vegetarian sausages
- parsley
- 1 onion, chopped
Step 1: Prepare The Ingredients
Fry off the sausages in a heated pan with oil. Chop the parsley and onion into small diced pieces, chop the apples into dice, slice your carrots into small pieces and then crush the garlic cloves. Once the sausages are cooked, slice into small pieces.
Step 2: Cook The Ingredients
Drizzle a generous amount of cooking oil into a large saucepan and heat. Add 675g unpeeled new potatoes. Then add 2 chopped apples, 450g sliced carrots, 250g chopped tomatoes, the vegetable stock and 1 tsp thyme. Stir, then add 1 tsp soy sauce or worcester sauce, 1 tsp English mustard, and the crushed garlic into the mixture.
Step 3: Simmer
Give the mixture a good stir until it's all mixed in evenly. Let this simmer now for about 25 - 30 minutes on a medium temperature, stirring occasionally.
Step 4: Add The Sausages
Add the sliced sausages into the saucepan. After about 5 minutes, the casserole will be ready to serve into a serving dish. Garnish with some chopped parsley. Serve.
