How To Make A Vegetarian Shepherds Pie

Ingredients

  • 1 tbsp oil
  • 1 onion, sliced
  • 2 carrots, chopped
  • 200 g brown lentils
  • 100 g sliced button mushrooms
  • 1 tsp mixed herbs
  • 2 cloves garlic, crushed
  • 2 celery, sliced
  • 500 ml vegetable stock
  • 2 bay leaves
  • 2 tsp soy sauce
  • 1 tbsp tomato puree
  • 500 g mashed potatoes

Step 1: Fry The Onions

Add 1 tbsp oil to a pan and heat. Add 1 sliced onion and cook until the onions are soft and translucent.

Step 2: Add The Other Vegetables

Add 2 chopped carrots, 200g brown lentils, 100g sliced button mushrooms, 1 tsp mixed herbs, 2 cloves crushed garlic, 2 sticks sliced celery, 2 bay leaves, 2 tsp soy sauce and 1 tbsp tomato puree. Then pour over 500ml vegetable stock. Mix well and allow to cook for 15 mintues. You can optionally add some vegetarian gravy powder to thicken.

Step 3: Assemble The Pie

Add the mixture to a casserole dish. Top with 500g mashed potatoes. Even the mash over the pie. Bake for 25 minutes at 180C. Serve.
