Step 1: Prepare

  • 55 g Butter
  • 240 ml Double Cream
  • 2 Garlic, crushed
  • 2 tbsp Parmesan or gruyere cheese
  • salt and pepper
  • chopped chives for garnish

Step 2: Pasta

Put the pasta into a pan of boiling water and leave to cook while you prepare the sauce.

Step 3: Sauce

Melt the 55 grams of butter in a sauce pan. Add the garlic and gently fry. Whisk in 235 ml of double cream. Have a taste and add salt and pepper if you think it needs it.

Step 4: Cheese

Whisk in the grated cheese a little at a time, stir until it melts. Taste again, adding more cheese, salt or pepper if needed.

Step 5: Serve

Drain the pasta and stir into the sauce. Serve immediately with the chives sprinkled on top.

    @ katiecooks: Dont talk so much nonsense.......... 1 Alfredo is an italian dish not american.......... 2 Alfredo was created by a man called Alfredo di Lelio......... 3 Alfredo di Lelio came from rome in italy......... 4 Alfredo was originally served with fettuccine pasta........ 5 Alfredo was originally made with double butter and parmesan only......... 6 Cream, Garlic and all other ingredients are variations of the original Alfredo.... Before telling others to get there Facts right maybe you should do some research and get your own right

    isnt the sauce gonna be bland with just garlic n cheese..i think there should be something more

    Buzzlehumph - Alfredo sauce should be made with just butter, garlic, cream and Parmesan - and it's American in origin, not from us 'Poms'. Carbonara is an egg and cream sauce - get your facts right first!

    No mushrooms? No fried bacon or panchetta? No tablespoon of coarse-ground black pepper? No chopped short-leaf parsley? So What's so Alfredo about this crap?-Its just carbonara with chives added. You Poms are bloody timid cooks!
