Step 1: You will need:

  • 6 cloves of garlic, peeled and roughly chopped
  • ½ tsp coarse salt
  • 1 egg yolk
  • 1 tbsp lemon juice
  • 180 ml olive oil
  • 1 mortar and pestle
  • 1 whisk
  • 1 bowl
  • 1 spoon

Step 2: Make the alioli

Put the garlic and the salt into the mortar and pound with the pestle until you have a fine garlic purée. Transfer the purée into the bowl and add the egg yolk and the lemon juice. Whisk until all the ingredients are thoroughly combined. Slowly add the oil in a thin stream while constantly whisking. Whisk until all the oil is incorporated and you end up with a thick, smooth, creamy mayonnaise.

Make sure to add the oil very slowly while whisking briskly. If you add the oil too quickly, the alioli will separate!

Step 3: Store and refrigerate

Transfer to clean bowl and serve! You can also cover it with the cling film and refrigerate. It will last up to 5 days.

    HI, we also made alioli and it was awful, but summerfields and morrisons sell spanish alioli, enjoy!!

    We tried this recipe and the result was so bad that we had to dump it in the toilet!!! We tried again with girasol and voilá. Don´t even bother with olive oil unless you really are in to it.

    Or you can just add crushed garlic and maybe a little virgin olive oil to a good quality store bought mayonnaise

    This is the tipical alioli, but the real ali-oli (catalan lenguage) is only with oil (oli) and garlic (ali), and perhaps with some breadcrumbs for thicken the sauce. This taste better. Thank you for your great videos.
