In this step by step tutorial, a professional chef from Leith's School of Food and Wine demonstrates how to make almond butter.

Ingredients

  • 55 g butter, at room temperature
  • 30 g ground almonds
  • 55 g icing sugar
  • 1/2 tsp vanilla extract

Method

Place your softened butter in a bowl. Sift over your almonds and sugar, and add a couple of drops of vanilla essence.

Carefully combine all the ingredients with a wooden spoon or an electric mixer.

Once it is well combined, wrap in cling film and roll into a cylinder. Leave in the fridge for 20-30 minutes to harden before cutting it into rounds.
