How To Make Almond Tuilles

Step 1: You will need

  • 100 g sugar
  • 50 ml cream
  • 60 ml honey
  • 40 g butter
  • 1 orange zest
  • 1/2 tbsp vanilla essence
  • 1 tbsp flour
  • 150 g almonds sliced
  • 1 saucepan
  • 1 spoon
  • some wax paper
  • 1 baking tray

Step 2: Pre-heat the oven

Set the oven to 180ºC or gas mark 4.

Step 3: Make a biscuit base

Place a pan over a high heat and add the sugar, cream, honey, butter, orange zest and vanilla essence. Allow it to melt, and stir it all together to blend. As soon as the mixture comes to the boil, pour in the almonds and then the flour. Turn off the heat while mixing everything together. Only remove the pan from the heat after mixing.

Step 4: Prepare the baking tray

Allow the mixture to cool for a few minutes before proceeding. Then once cool, individually spoon small circles of the biscuit base onto the baking tray that you have previously lined with wax paper. Make sure that there is enough space between each tuille for expansion while cooking. For this reason it is best to cook this recipe in batches.

Step 5: Bake

Place the tray into the centre of a pre-heated oven and bake for 5 minutes. Then remove.

Step 6: Serve

Leave the tuilles to cool down; as when they are hot they are soft. Lift the biscuits off the wax paper when they are firmer. Eat them within a few hours, or put them in the freezer which will keep them super crispy.
