Ingredients
- 2 butter
- 2 vegetable oil
- 500 g parboiled new potatoes
- 1/2 tsp mustard seeds
- 1 onion, chopped
- 1 tin chopped tomatoes
- 3 tamarind slices
- 1 tsp curry powder
- 1/2 tsp fenugreek seeds
- 100 ml vegetable stock
- 1/2 tsp chilli powder
- 3 garlic cloves, chopped
- 1 tsp fresh coriander, chopped
Method
Heat the oil and butter in a pan, then add the onions, garlic, fenugreek, mustard seeds, chilli powder, potatoes and curry powder. Mix well, then add the tamarind and the stock and bring to the boil.
Add the chopped coriander and chopped tomatoes, bring to the boil, and simmer for 25 minutes until the sauce has thickened.
