How To Make An Amaretto Cake

In this video, cake makers Annabelle and Rob, from Confection Perfection, show us how to bake and decorate Amaretto cakes.

Ingredients

  • 250 g Castor Sugar
  • 250 g Self-Raising Flour
  • 4 Eggs
  • 100 g Almonds, ground
  • 50 ml Amaretto
  • Salt
  • 500 g Butter
  • 250 g Icing Sugar
  • 1 Single Espresso
  • Amaretti Biscuits

Step 1: Start Mixing

Add 250g butter and 250g sugar to mixing bowl, and cream together.Then add the eggs one at a time to the mixer.

Step 2: Add Other Ingredients

Sieve the flour and add to the mix, folding through lightly. Add the almonds, amaretto and salt. Fold through again for about two minutes, until there are no lumps.

Step 3: Bake The Sponges

Line two sandwich tins with greaseproof paper and put half the batter in each, spreading evenly. Put in the oven at 160 for 22 minutes, until springy to the touch. Drizzle a little Amaretto on to the cakes while still warm, then leave to cool.

Step 4: Make Some Butter Cream

Combine 250 grams of soft butter, 250 grams of icing sugar, a shot of espresso and a good shot of Amaretto. Mix until nice and fluffy.

Step 5: Combine And Finish

Spread half the cream over one of the sponges. Break up some Amaretti biscuits and spinkle over. Place the other sponge on top, then spread the rest of the icing over the top of it. Finish with a few amaretti biscuits.
