- 85 g lard
- water
- olive oil
- salt
- flour for dusting
- 4 eggs
- 250 g cheddar cheese
Method
Add the flour, salt, lard and margarine to a large mixing bowl. Rub together using your fingers until the mixture forms into breadcrumbs. Make a well in the centre of the mixture and pour in some cold water. Bring the mixture together gently as a dough.
Roll out half of the mixture on a floured surface. Lay carefully into a baking tray and flatten out till smooth.
For a quick and easy filling, add some grated cheese and 3 to 4 beaten eggs. Roll out the second half of the dough and lay on top of the cheese and eggs. Flatten down and trim the edges with a sharp knife. Pinch the edges together with your fingers.
Put two holes on the top and brush with an egg wash. Bake in the oven for 25 to 30 minutes, or until golden brown.
