Watch, Rob, from confection perfection and he'll teach you step-by-step how to make a delicious, light a fluffy angel cake.
Today, we're going to be making angel cake. The ingredients are: 10 egg whites, 250 grams of caster sugar, 125 grams of sifted, plain flour. I've used a drum sift to sift the flour.
Also, a teaspoon of cream of tartar, a teaspoon of vanilla extract, and we're also going to be using yellow food coloring and ruby food coloring. Okay, so in our mixing bowl I'm going to put our 10 egg whites and our caster sugar. And then put them onto our machine with the balloon whisk attachment.
And then we're going to whick these on a high speed until a full peak is formed. So, now we can see that full peaked is formed. So, the egg whites themselves are holding their own weight.
And then we're going to add our cream of tartar which is to add strength to our egg white. And also the sifted flour. And a few drops of vanilla essence.
Then we're going to fold these through nice and lightly. You don't want to be knocking out any of that valuable air that we've created from whisking our egg whites. Scraping around the sides of the bowl and cutting through the egg white.
Now that's incorporated I'm going to divide these equally into 3 portions to 3 bowls. And then 1 we're going to leave white. 1 we're just going to add a little bit of the ruby food coloring.
And the 3rd one a little bit of the yellow food coloring. And then we'll just fold through the coloring through. Again, nice and lightly, big strokes around the edge of the bowl cutting through the mix.
And then here I've got. I'm using a multi size tin which I've lined into 3 equal portions. You can use 3 cake tins if you like all being the same size.
I'm going to put the yellow in. Then I'm going to fold through the red one. Pink one should I say.
We'll pour in the white one. And then we'll just spread the mix out into the corner of the tins so it's nice and even, cooks evening. And this can go in the oven about 180 degrees for about 18 to 20 minutes.
You'll know when it's cooked because it will be firm to the touch. Quite springy, as well. Okay.
Now it's time to build our angel cake. As you can see we've got the 3 different colors here. They have nicely cooled down.
Taken off the rest of the greese proof paper. Now, I've got some icing here in a piping bag which I've made with 100 grams of soft butter, 100 grams of icing sugar, and 40 grams of melted white chocolate which I've mixed together in the machine. So, it's nice and light and fluffy.
Then I'm just going to pipe it onto the angel cake. And then I'm going to put the next layer on. You can also, you don't have to use a piping bag.
You can just spoon it on if you like and then take a palette knife and just spread it over the cake. Then on goes the top layer. And then we'll cut it in half and that's how you make angel cake.
