How To Make Angel Food Cake

In this step by step recipe Rob from confection perfection will show you how to make an angel food cake. This angelic dessert will really impress your guests at any dinner party!

Ingredients

  • 10 Eggs
  • 250 g Caster Sugar
  • 120 g Plain Flour
  • 1 tsp Cream of Tartar
  • 1 tsp Vanilla Extract
  • Food Colourings, yellow and ruby
  • 100 g Butter
  • 100 g Icing Sugar
  • 40 g White Chocolate

Step 1: Whisk Together

Add the whites of the eggs and the caster sugar to a mixing bowl. Whisk at high speed until it forms a full peak. Add the cream of tartar, the sifted flour, and the vanilla essence. Fold through lightly, scraping round the sides.

Step 2: Colour

Divide the mixture equally into 3 bowls. Leave one plain, add a little ruby colouring to one, and a little yellow to the other. Fold the colouring through lightly.

Step 3: Bake

Take three cake tins, or one divided into three sections, and add each colour of meringue separately. Cook at 180 degrees for about 18 to 20 minutes, until firm to the touch and quite springy. Remove and cool.

Step 4: Ice

Make some icing by mixing together 100g butter, 100g Icing Sugar and 40g melted white chocolate. Pipe this over the bottom two layers of angel cake. Add the three sections one on top of the other.
