Couscous is a traditional cuisine that is starting to grow in popularity in many countries. It can be cooked with vegetables, fruits and meat. This video describes how to make an Apricot Couscous.

Step 1: You will need

  • Dried Apricots
  • Icing Sugar
  • Butter
  • 400 ml Water
  • 5 tbsp Caster Sugar
  • Salt
  • Olive Oil
  • Vanilla Pods (optional)

Hi there, I am Matt Kemp from the Underground Cookery School. I am going to show you a number of couscous recipes today. Today, I am going to show you how to make an apricot couscous.

Now, what I have done in advance is I have made a sweet stalk. What I have done is, I have taken 400 ml of water and 5 tablespoons of caster sugar, mixed them and brought them up to a boil. That is effectively a stalk.

Whenever you make a couscous, you need a hot liquid to add to it. Whatever flavor is in that liquid, it is going to enhance the dish. So, if you are doing a savory couscous, you could do it with either chicken, beef, lamb stalk or you could use stalk cubes.

I have done a previous podcast where we have done an orange juice but here, it's just a sweet one, it's been just a sweet dessert. This is just the water and sugar combined with some vanilla pods in there to make it really exciting. What I am going to do now is to cover those ingredients, which is the couscous which you can get in any super market and just leave it there for 10 minutes.

During that time things will cook perfectly. Now, what you can also do, just to help it along, is just add a pinch of salt, little bit of olive oil and maybe just a little bit of butter not too much but just the odd dice here and there, and that is going to enhance the flavors. Normally, what I would have done is actually to put it straight into the stalk.

But if you just give it a good old mix, it will have the same effect effectively. So, come back in 10 minutes and we will finish this dish of. So now, the couscous is cooked, I am going to put it in a bowl so that I can fluff it up.

It's actually a really lovely texture. Sometimes you might need to use a fork just to really get the, you can see there for example, it's a little bit stuck together and hot. But on the whole, very happy with that because we cooked it with the sweet stalk, it is going to be quite sweet anyway.

So don't add too much sugar to it and that in itself is going to be a nice dish. We are just going to make it a little bit more interesting with these lovely dried apricots which we stick on the top. Then just to finish the whole dish of, a final thing is a little dusting of icing sugar.
