Ingredients

  • 1 tsp ginger
  • 1 clove garlic
  • 3 tbsp lime juice
  • 1 tbsp rice vinegar
  • 2 tsp light soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey
  • 2 1/2 tbsp fish sauce
  • 1/2 cucumber
  • 1 large carrot
  • 1 red pepper
  • 1 yellow pepper
  • 150 g Chinese leaf
  • 1 tbsp fresh mint leaves
  • 1 tbsp fresh coriander leaves

Step 1: Prepare Ingredients

Grate your ginger, and crush your garlic. Deseed and slice your cucumber, and grate your carrot. Slice and deseed your peppers, and slice your Chinese leaf. Finely chop your mint leaves and coriander leaves, and deseed and slice your red chilli. Finally slice your red onion, and crush your peanuts.

Step 2: Make Dressing

Into a mixing bowl, combine the ginger, the garlic, the lime juice, the soy sauce, the rice vinegar, the honey, the fish sauce, and stir these ingredients.

Step 3: Make Salad

Combine everything, apart from the coriander, into a large mixing bowl, and mix together with two large spoons.

Step 4: Serve

Serve onto a serving plate, and garnish with some chopped coriander, and some crushed dry roasted peanuts.
