How To Make Aubergine With Shrimps And Chorizo

Step 1: You will need...
- 4 medium aubergines
- 8 large shrimps, peeled
- 250 g natural yoghurt
- 100 g Spanish chorizo, cubed, or any spicy sausage
- 4 cloves of garlic
- 8 cherry tomatoes
- 1 small handful rocket leaves
- 60 ml olive oil
- salt and pepper
- 2 trays
- 1 frying pan
- 1 pair of tongs
- 1 spoon
- 1 chopping board
- 1 knife
- 1 oven tray
Step 2: Preheat the oven
Set the oven temperature to 250ºC (475ºF/ gas mark 9).
Step 3: Prepare & roast the aubergine
Pierce the aubergines with a knife then put them onto the oven tray. Roast for about 25 minutes in the oven.
Step 4: Prepare the yoghurt
Add the olive oil to the yoghurt and season with salt and pepper. Mix well to get rid of any lumps in the yoghurt. Set aside.
Step 5: Check the aubergine
When the aubergine is soft, remove from the oven and allow to cool. Once cooled, cut off the ends of the aubergine and peel off the outer layer. Lay them on a tray and season with salt and pepper.
Step 6: Cook the garlic
Heat the frying pan over a medium heat. Add the oil and the garlic cloves. Cook for 4 minutes until they are lightly browned and soft.
Step 7: Cook the other ingredients
Increase the heat and add the chorizo. Fry for 2 minutes whilst stirring. Add the shrimps, season with salt and pepper and add the tomatoes. Turn the shrimps over and continue to cook on the other side.
Remove the pan from the heat.
Step 8: Serve
Place an aubergine in the middle of a plate and dress generously with the yoghurt mixture. Add a few leaves of rocket, a couple of shrimps, tomatoes, garlic and a little chorizo. Spoon over some olive oil and serve.
