Step 1: Separate the eggs

  • 2 ripe avocados
  • 3 gem lettuces, washed and destalked
  • 4 long wafer thin slices of gouda cheese
  • 3 tbsp extra virgin olive oil
  • 250 ml sunflower or vegetable oil
  • 1 garlic clove, peeled
  • 3 tbsp shallot vinegar
  • 3 eggs
  • 100 g grated parmesan cheese
  • salt and pepper
  • 1 food processor
  • 1 wooden spoon
  • 1 medium bowl
  • 1 colander
  • 2 small bowls
  • 1 chopping board
  • 1 large knife

Step 2: Make the dressing

Blend the garlic, shallot vinegar and eggs in the food processor until the mixture turns frothy. Slowly drizzle in all the oil in a thin stream. Add the grated parmesan, season with salt and pepper and then briefly blend again.

Step 3: Prepare the lettuce

Cut off the stalk bottom of the baby gem lettuces and then break off into whole leaves.

Step 4: Wash the lettuce

Place the lettuce leaves in the colander and wash under a cold tap. Then pat dry.

Step 5: Prepare the avocados

Run a knife round the whole avocado and split it in half. Give the stone a sharp tap and twist. It should come out easily.

Step 6: Peel and fan the avocados

Peel off the skins and without cutting all the way down, slice and fan the avocados.

Step 7: Serve

Place four of the lettuce leaves back to back onto the serving plate. Then place the fanned avocado on top. Spoon a generous layer of the dressing over the lettuce and place a slice of the gouda cheese on top. Finally, drizzle some olive oil over and sprinkle with black pepper.
