How To Make Bacon Pasta

Ingredients

  • 8 smoky bacon rashers
  • 100 g 00 flour
  • salt
  • 1 free range egg
  • parmesan, grated
  • pepper
  • olive oil
  • rocket

Method

Lay your bacon in a baking tray on greaseproof paper, then cook in the oven until it goes crispy, this should take about 12-15 minutes.

Mix your flour and a pinch of salt. Create a well in the flour and crack an egg into it and combine with a fork until you have a dough, then knead for a few minutes.

Roll the dough through the pasta machine a few times, folding it over each time. Keep putting the dough through the machine for a few minutes.

Flatten the dough by setting the machine to thinner settings, folding it up each time you put it through the machine. You may have to dust a little more flour on the dough.

When you have a thin dough, dust with flour, then cut it in half. Feed the sheet of pasta into the machine with the cutting attachment fitted, catching it on the back of your hands as it comes out of the machine.

Lay some baking paper over an open cupboard door, then drape over the pasta and leave to dry for about 20 minutes.

Cook the pasta in boiling water; if you have made it fresh it will be very quick, just keep checking it until it is done.

Drain the pasta, leaving a little water behind, then season in a bowl.

Serve with a bit of grated parmesan, some rocket, the broken up bacon, ground black pepper and a drizzle of olive oil.
