How To Make Baked Bream With Herbs

Step 1: Boil the water
Fill the saucepan about ¾ of the way with water, sprinkle in some salt and place the pan over high heat to boil.
Step 2: Boil the potatoes
Once the water is boiling add the potato slices and boil for 3 minutes. Drain the water away and put the potatoes to one side to cool.
Step 3: Fry the vegetables
Pour the olive oil in the frying pan and place it over a moderate temperature to heat. Add the sliced onion and red and green peppers and fry for 5 minutes or until soft. Remove the pan from the heat.
Step 4: Prepare the herbs
Using a pestle mortar, grind together the cloves, cumin, paprika, peppercorns, rock salt and coriander seeds.
Add the lemon juice, chopped parsley and chopped coriander and continue grinding until a paste is formed.
Step 5: Preheat the oven
Preheat the oven to 250ºC or gas mark 6.
Step 6: Layer the vegetables in the oven dish
While the oven is heating up, layer the potatoes and fried onion and peppers in the oven dish. Season well with salt and pepper and also drizzle over a little olive oil.
Step 7: Cut the bream and add the paste
To prepare the bream, cut a few diagonal slashes in both fish and coat the inside and out with the paste. Place on top of the vegtables.
Step 8: Add the lemon, coriander and parsley
Finally, insert 2 lemon wedges, the parsley and coriander leaves inside each fish. Sprinkle the tomatoes on top, add a little more oil if necessary and place the dish in the oven to cook.
Step 9: Bake for 25-30 minutes
Leave the bream and vegetables to bake for 25-30 minutes until the fish is thoroughly cooked.
