How To Make Baked Rice Pudding

Ingredients

  • 50 g pudding rice
  • 25 g caster sugar
  • 600 ml milk
  • 2 tsp mixed spice

Method

Place the pudding rice, sugar and milk into a greased baking dish. Stir and place in the oven for half an hour. Stir in the mixed spice and return to the oven for a further half an hour. All of the milk should have been absorbed by the rice and the rice should be soft. If the rice still feels a little hard, add some more milk and cook for slightly longer.

Serve straight away, on its own of with a drizzle of double cream.
