How To Make Banana Chocolate Chip Muffins

Ingredients

  • 280 g plain flour
  • 85 g butter, melted
  • 1 baking powder
  • 1 tsp bicarbonate of soda
  • 120 g sugar
  • 2 large eggs
  • 250 ml milk
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 2 small ripe bananas
  • 200 g chocolate chips

Method

Pre-heat your oven to 200 degrees Celsius.

Sift the flour, baking powder and bicarbonate of soda into a bowl, then mix in the sugar and chocolate chunks. Make a well in the dry ingredients and set aside.

Beat the eggs in a bowl, then whisk in the melted butter and the salt. Mash the bananas with a fork and add them to the milk along with the vanilla extract. Whisk the banana and milk mixture into the eggs.

Pour the wet ingredients into the well in the middle of the dry ingredients, then gently combine all the ingredients with a spatula. Spoon the mixture into a greased and floured 6 muffin tin.

Bake for about 20-25 minutes. Insert a skewer into one of the muffins to check whether they are cooked all the way through; if the skewer comes out clean, they are ready.
