How To Make Banana Cupcakes

Ingredients
- 250 g unsalted butter, at room temperature
- 340 g caster sugar
- 4 eggs
- 200 g sour cream
- 3 bananas, very ripe
- 40 g golden syrup
- 300 g self raising flour
Method
Cut your butter into cubes and put it in your electric mixer with the caster sugar.
Cut you vanilla pod in half, scrape out the seeds and add them to your butter and sugar, then beat the mixture until it is pale and creamy.
Add your eggs one at a time, making sure each egg is fully incorporated before you add the next one. Scrape down the edges to make sure it is all being incorporated.
Add your sour cream to the cake mix, half at a time, and fold it in.
Bled your bananas together with the golden syrup until you have a smooth paste.
Add banana mix and the sifted flour to the cake mix and fold together with a whisk.
Put your cupcake cases into a cupcake tin and half fill them with the cake mix. Bake for 25 minutes and ice.
